Cajun Shrimp & Cheese Grits — Simple, Savory, and Ready in 20 Minutes
Servings: 2
Total Cost: ~$5.25 (about $2.63 per serving)
Time: 20 minutes
Ingredients (Walmart Store Brands):
½ lb raw shrimp, peeled & deveined (~$2.50 from a 1 lb bag of Great Value shrimp)
4 packets Great Value Instant Cheese Grits (~$2.40 total)
¼ cup shredded cheddar cheese (~$0.25)
2 tbsp butter or margarine (~$0.15)
1 tsp Cajun seasoning (~$0.10)
Salt & pepper to taste
2 tbsp chopped chives (~$0.20)
Water or milk (for preparing grits)

Instructions:
1. Make the Grits: Prepare all 4 packets of instant cheese grits according to package directions. Use milk instead of water if you prefer creamier texture. Stir in shredded cheddar and season with salt and pepper to taste.
2. Cook the Shrimp: Melt butter in a skillet over medium heat. Add shrimp, Cajun seasoning, a little salt and pepper. Sauté for 3–4 minutes until shrimp are pink and fully cooked. Remove from heat.
3. Assemble & Serve: Divide grits into two bowls. Top each with sautéed shrimp and sprinkle with chopped chives, add a sprinkle of shredded cheese. Serve hot.
Budget Tips:
Frozen shrimp thaw quickly—great for fast meals.
Bulk packs of grits are cheaper than pre-made sides and more filling.
Use any leftover cheese or herbs to build flavor affordably.
