Ingredients:

Instructions:
Preheat the Oven: Preheat oven to 350°F. Grease a muffin tin or line with muffin cups.
Prepare the Ingredients:
Bacon bits: If the bacon bits are not pre-cooked, lightly heat them in a skillet to crisp up slightly (about 1–2 minutes).
Vegetables: If using frozen vegetables, thaw and drain any excess liquid. If using fresh vegetables, sauté them in a bit of olive oil until tender.
Make the Egg Mixture: In a mixing bowl, whisk the eggs. Add garlic powder, salt, pepper, and ½ of the shredded cheese. Mix well.
Assemble the Muffins: Evenly distribute the cooked bacon bits and vegetables into each muffin cup. Pour the egg mixture over the filling, filling each cup about ¾ full.
Bake the Muffins: Bake in the preheated oven for 18–20 minutes or until eggs are fully set and lightly golden on top.
Cool and Serve or Freeze: Let the muffins cool for a few minutes, then carefully remove them from the tin.
To freeze, let them cool completely, then wrap individually in plastic wrap or foil, and store in a freezer bag. Reheat in microwave or oven.
